Antiguas Reservas - Cabernet Sauvignon

Antiguas Reservas is Cousiño Macul´s emblematic wine, with over 80 years in its portfolio. Since its debut in 1927, it has always been a limited selection of the best Cabernet Sauvignon of Cousiño Macul’s vineyards. Along the years, we have maintained its classic style, combining the maturity of the New World, the elegance of the traditional wines and a structure that allows an adequate aging capacity.

Harmonies

This elegant wine is ideal to accompany medium to high intensity preparations. Excelent partner with tenderloin with pepper or truffle sauce and grilled vegetables. Also excellent with Granna Padano or goat cheese. As a vegetarian option, it could also be paired perfectly with mushroom risotto.

Winemarker’s notes

The 2013-2014 season was one of extreme climates: a dry winter, a very cold spring period and extremely high temperatures during the summer. The only important rainfalls during the winter of 2013 were recorded by the end of May, while the remaining months presented only scattered and irrelevant precipitations. Nevertheless there were no complications in providing the proper irrigation for the vineyard. Temperatures were mild, in general, which resulted in gradual, optimal ripening of our grapes. The absence of precipitation during the final ripening stage encouraged optimal crop health.

Winemaking

After a careful manual harvest and careful selection in the cellar, elaboration of the wine began with seven days of cold maceration at 10 º C (50°F). Then the juice was fermented during 9 to 10 days at an average temperature of 26 º C (78.8 º F), using different yeast strains. A 20 days post fermentative maceration allowed enhancing the flavors and bouquet, as well as smoothing the tannins. The wine matured in French oak barrels during twelve months while the malolactic fermentation went through. After this final stage, it was gently filtered and bottled.

Tasting notes

Intense bright rubi red color. The aromas are clearly frutal and spiced, giving a first impression of plums, raspberry, cherry and a floral note with fresh pepper. Afterwards, it gives space for toffee accompanied by vanilla and a smoked scent. In mouth, it has a medium to high acidity, round tannins and very frutal feeling. It´s an elegant wine with an intense body, fresh and long mouthfeel.
