Due to its varietal characteristics, it is an ideal wine to go with all type of cuts of medium to high intensity meats such as beef accompanied with mashed sweet potato and prunes or pork cutlets in simple preparations, as well as spiced mushroom risotto with a reduction of red wine. Cold cuts of pastrami which would enhance its herbal and fresh characteristics and a wide variety of cheese like Emmental, Granna Padano and Goat Cheese.
The 2013-2014 season was one of extreme climates: a dry winter, a very cold spring period and extremely high temperatures during the summer. The only important rainfalls during the winter of 2013 were recorded by the end of May, while the remaining months presented only scattered and irrelevant precipitations. Nevertheless, there were no complications in providing the proper irrigation for the vineyard. Temperatures were mild, in general, which resulted in gradual, optimal ripening of our grapes. The absence of precipitation during the final ripening stage encouraged optimal crop health.
100% of this wine comes from a specific vineyard in Buin, specially managed and dedicated to the best Cabernet Sauvignon of this Estate. After a manual harvest it passes through a strict selection inside the cellar, a maceration at low temperature (7°C – 44.6°F) that takes one week and then the fermentation is started at an average temperature of 25°C – 77°F. This process takes around 12 days and is finished with a post-fermentative maceration for a greater extraction of color and aromas for two weeks. After maceration, 50% of this wine is transferred to new French Oak barrels and the other 50% to second use French Oak barrels, where it ages for 12 months while it goes through a full malolactic fermentation. After this period of time in barrels, it is transferred to stainless steel tanks for stabilization and it is finally bottled.
With a bright ruby red color, its bouquet is clear and fruity, with a perfect balance between fruit and French oak. It has a wide variety of aromas, reminding us of prunes, blackberries, vanilla, toffee, tobacco, fresh chocolate and menthol. After some minutes, it gives way to leather and herbal aromas. To the palate it is elegant and pleasant with great presence of ripe red and black fruits; it presents medium-high acidity, elegant tannins and a long-lasting ending.
