This wine shows all the varietal character of Cabernet Sauvignon. Totally fermented in stainless steel tanks, the emphasis is on maintaining the vivid character derived from the vineyards. It is a Cabernet Sauvignon without wood, fruity and balanced, but well structured allowing to accompany dishes in the background.
Due to its varietal characteristics, it is an excellent wine to accompany simple dishes such as pork chops, spicy preparations of medium-high level or cold charcuterie, including salami and semi-hard cheeses.
The 2014-2015 season had the highest temperatures and the lowest amount of frost in the last three years. Its main characteristic was the absence of rainfall during flowering and harvest, giving us a very healthy fruit to work from the beginning. The high temperatures made it reach the optimum point of maturity of our grapes faster, giving our wines moderate acidity, structured tannins and high aromatic intensity.
Immediately after the harvest, the grapes went through the grinding process and then began a period of low temperature maceration for 3 days in stainless steel tanks. After this time, the juice was inoculated with yeasts and the alcoholic fermentation began, which takes between 8 to 10 days at a temperature of 26-28 ° C. At the end of this process, a complete malolactic fermentation was carried out, stabilized for several months, filtered and finally bottled.
De un color rojo rubí brillante. De aromas frescos y frutales, donde destacan mora, frambuesas, hojas de tabaco, toffee y una menta muy sutil. En boca es un vino seco, frutal y elegante, de acidez media y taninos dóciles. La entrada es progresiva y la sensación persiste por un largo tiempo.
