Don Matías Reserva owes his name to the founder of Cousiño Macul. It is a pure and elegant wine, whose quality starts from the selection of its quarters in the vineyard until its bottling. Through the years it has evolved, until becoming one of the favorite of consumers and specialized press.
Ideal complement for a loin with mashed sweet potato / sweet potato or spiced pasta, for example, pesto, for its freshness. Excellent option also to accompany together with semi-ripe and hard cheeses, as an appetizer.
The 2014-2015 season had the highest temperatures and the lowest amount of frost in the last three years. Its main characteristic was the absence of rainfall during flowering and harvest, giving us a very healthy fruit to work from the beginning. The high temperatures made it reach the optimum point of maturity of our grapes faster, giving our wines moderate acidity, structured tannins and high aromatic intensity.
The grapes are selected at the entrance of the winery, entering the fermenting vat only healthy grapes free of green elements. Beginning this way a process of maceration in cold of 5 days. The fermentation occurs in 7 days to give way to a post-fermentative maceration of 20-30 days. The fermentation is carried out at a temperature of 26-27 ° C, with selected yeasts. This wine is passed through a period of 6 months in contact with French oak, also giving rise to a complete malolactic fermentation. All the handling and selection of the raw material together with the delicate process allows to obtain complex wines, representative of the variety, balanced in its fruit and wood preserving the elegance of this Reserva line.
Of a brilliant ruby red color with medium depth. On the nose you can perceive a complexity of aromas where herbaceous and fresh notes like mint, red fruits, strawberries and figs stand out, to give way to a soft toasted sensation. The palate presents a fruity entry, ripe and elegant tannins of medium intensity, medium-high acidity, consistent flavors with fruity aromas and a long final sensation.
