Finis Terrae is a clear reflection of the terroir of the Maipo Valley, expressed through the best selection of Cabernet Sauvignon and Merlot from Cousiño Macul. It is a mixture created by hundreds of combinations that found the ideal balance of fruit, acidity, tannins, alcohol and French oak
It is the perfect company for high-intensity roasts, such as roasted confit strip with mushroom risotto, pepper steak, game meats and selection of mature French cheeses. It is a wine to enjoy at a temperature between 18 and 20 ° C.
The 2011-2012 season began with a very dry winter, followed by a warm spring that allowed a budding couple. The summer had higher average temperatures than normal, which resulted in an advance of the harvest date of most varieties. The sanitary status of the grapes was very good and with a correct maturation thanks to the climatic conditions.
After a thorough harvest by hand in small boxes of 10 kilos, a selection of bunches was made and then a selection of berries to ensure that only grains of grapes that meet our quality parameters entered the tank. It was cold-macerated at 7 ° C (45 ° F) for one week and subsequently inoculated with yeast. The fermentation was carried out at a controlled temperature between 26 ° C and 27 ° C for both varieties separately, which took around 10 days. The post-fermentation maceration lasted about 2 weeks and then the wine was transferred to new barrels where its malolactic fermentation ended. To continue, the mixture of Cabernet Sauvignon and Merlot was made, which up to this moment rested separately, returning this blend to the new barrels where it was left to evolve during 18 months. Finally, the wine was carefully transported and bottled without previous filtration.
Deep cherry red color with yellowish edges that show its aging. It has a complex aromatic expression, remembering cherries to begin with, continuing with figs, some floral and spicy aromas that are mixed with a bitter chocolate and a subtle toast from the French oak used. In the mouth a medium-high acidity is perceived, accentuates spices, tobacco and fresh bitter chocolate, accompanied by velvety tannins and a very long finish.
