Antiguas Reservas is the winery's flagship wine line, with more than 80 years in our portfolio. The first vintage released to the market of this Cabernet Sauvignon was in 1927, maintaining the classic style that represents Cousiño Macul, combining the maturity of the New World, the elegance of traditional Old World wines and the structure that allows adequate capacity of aging.
This elegant wine is ideal to accompany medium to high intensity preparations. An excellent complement with Lomo vetado a la pepper or sauce with truffles and sautéed vegetables. As a vegetarian option it is ideal accompanied by a mushroom risotto. It is also possible to supplement with several types of mature medium to high intensity cheeses, such as granda padano or goat cheese.
You could say that the 2013-2014 season was that of extreme weather: a dry winter, a very cold spring and a summer with very high temperatures. The only significant precipitations of the winter 2013 occurred at the end of May, the rest of the months the rains were scarce. However, there were no problems to supply the vineyard with the necessary irrigation. The temperatures in general were moderate allowing a gradual and optimal maturation of the grapes. The absence of rainfall during the final period of maturation and harvest allowed optimal health of the grapes.
After a careful manual harvest and selection in the winery, vinification began with 7 days of low temperature maceration (10 ° C; 50 ° F). The fermentation lasted 9 to 10 days at an average temperature of 26 ° C (78.8 ° F), using different strains of yeast. After this process, a 20-day post-fermentative maceration was carried out, increasing the extraction of aromas, flavors and other components while rooting the tannins. The wine then matured in second-use French oak barrels for 12 months, during which period the malolactic fermentation also developed. To finish, the wine was clarified and filtered slightly before bottling.
Intense and bright ruby red color. The aromas are remarkably fruity and spicy, letting first notice plum, blackberry, cherry, a floral touch and fresh pepper. Then it gives way to sweet notes reminiscent of toffee, accompanied by vanilla and a smoky tone. In the mouth, a medium-high acidity is perceived, soft sweet sensation, well-known round tannins and very fruity. It is an elegant, bent, fresh and fruity wine with a long finish and persistence.
