Viña Cousiño Macul Since its beginnings, Cousiño Macul Winery has been constantly incorporating in its wine processes sustainable procedures that allow to maintain a wider vision of the business. Additionally, these procedures help create habits and ways of working among all the people involved during the processes of winemaking. Regarding production and environment, Cousiño Macul is committed to the ecology and its mission is to minimize the impact in the process of winemaking as much as possible, keeping the quality that characterizes all its wine production line. Nowadays water is a scarce resource. To make a efficient use of this element, the winery incorporated one of the most technological processes to the treatment of Liquid Waste Management (LWM). Therefore, these wastes are treated more efficiently, and the result is clean and clear residual water. “LWM are treated in our deposits through a biological system that includes bacteria that consume the organic material. By this process, we avoid the severe effects that the wasting produce in our environment, in the aquatic flora and fauna of rivers, lakes and natural gullies. The water that we obtain from this process is clean and odorless, but it isn’t drinkable. However is neutral. Only through a water treatment program we could transform this to water for human consumption”, explained Gabriel Mustakis, Chief Winemaker of Cousiño Macul. This is a clear example of how has the winery faced its environmental challenges in a key and important industry for our country. “For us, working efficiently and under high standards of quality and safety mean to make appropriate and sustainable decisions that include the best cost-benefit performance for the company, the people, the environment, and the products”, said Verónica Cousiño, Deputy Manager of Marketing and Exports. In addition, the winery recycles other wastes such as paper, glass and cardboard, which are sent to different institutions and foundations that give an ecological purpose to waste products.
