This wine is named after one of Cousiño Macul founder’s, Mrs. Isidora Goyenechea, Luis Cousiño’s widow. The vine cuttings of Sauvignon Gris were brought from the region of Graves, in Bordeaux; along the years we have seen how they have adapted in an extraordinary way to Maipo Valley.

Perfect pairing for sweet and sour ceviche, shrimps, salmon carpaccio, pasta with seafood and any type of salads. Also ideal for drinking without any specific pairing, by itself and in good company.
Season 2015-2016 had uncommon climate conditions. The main aspects were a cold spring, which delayed the ripening of the grapes, and intense rainfall in the harvest period decreasing the yield in our vineyards. Nevertheless, our winemaking team managed the situation very well and got wines of excellent quality, representative of each variety and origin. According to these conditions, our wines have a good natural acidity, whites are fresh with lower alcohol levels and reds are elegant with very present floral and fruit notes.
Harvesting Sauvignon Gris was performed manually during the first days of March. The grapes were brought to the winery, and the entire cluster was carefully pressed, without the presence of oxygen to preserve the fresh aromas of the variety. Then the juice is inoculated with selected yeasts and fermentation was carried out at low temperatures (13 ° C – 55 ° F), taking about 25 days. The wine was aged for 5 months in stainless steel tanks. Before bottling, the wine was clarified and filtered.
Of a green yellowish, clean and bright color. Aromas that remind us to fresh pineapple, grapefruit and apricot; after a while we also can perceive chamomile and floral notes. In mouth, it presents very rich acidity, a sweet feeling even-though it is a dry wine, the grapefruit and apricot notes are confirmed giving way to a very enjoyable experience and long mouthfeel.
