We recommend harmonizing this syrah with intense preparations such as pork chops or ribs barbeque with mashed sweet potatoes. Spanish ham and hard cheeses.

Winemaker’s notes

Season 2014-2015 had the highest temperatures and least amount of frosts in the last 3 years. It`s main characteristics was the absence of rainfalls during the flowering and harvest period, giving us very healthy grapes to work with. High temperatures got our grapes faster to the optimal ripening, giving to our wines a discreet acidity level, structured tannins and higher aromatic intensity.

Winemaking

Manual harvested and ground into stainless steel tanks. After a cold maceration of one week, fermentation took place at an average temperature of 26°C (78.8°F) during 10-12 days. Native yeasts were used for enhancing the character of our vineyards in Alto Maipo. When alcoholic fermentation was over, this wine went through a full malolactic fermentation, it matured in contact with French oak for 6 months, was clarified, filtered and finally bottled.

Tasting notes

Deep purple red color. High intensity and complex combination of aromas including leather, blackberries, black cherries, pepper, caramel and toffee. In mouth, it has a soft start and increasing evolution. Medium to high acidity, flavors are consequent with aromas, persistent smooth tannins and a long lasting finish.
