Don Matías -
Don Matías Reserva owes its name to the founder of Cousiño Macul. It is a pure and elegant wine, whose quality begins from the selection of its quarters in the vineyard and continues up to its bottling. Along the years it has evolved, until it became one of the favorites among the consumers and the specialized media.

Medium intensity dishes are recommended for our Don Matias Carmenere 2015. Sommelier suggestions: Meatloaf or spiced chicken with quinoa tabbouleh. Mexican or other spicy dishes of medium intensity.
Season 2014-2015 had the highest temperatures and least amount of frosts in the last 3 years. It`s main characteristics was the absence of rainfalls during the flowering and harvest period, giving us very healthy grapes to work with.
High temperatures got our grapes faster to the optimal ripening, giving to our wines a discreet acidity level, structured tannins and higher aromatic intensity.
The grapes for this wine were harvested by hand, taken immediately to the cellar and gently ground in stainless steel tanks. A one week cold maceration process was used before fermentation started, which took 10-12 days at an average temperature of 26ºC (78.8°F) with native yeasts to highlight the expression of the Alto Maipo zone.
After pressing, the wine evolved in contact with French oak for 6 months while the malolactic fermentation took place. When finished, it was clarified, filtered and then bottled.
Deep red carmine color. It has a medium aroma intensity, mainly wet leafs, strawberries, green pepper, some leather and coffee seeds with a subtle floral finish. In mouth, it has medium to high intensity, persistent tannins, high volume and acidity and a long lasting mouthfeel to it´s end.
