Gris

Don Luis - Cabernet Sauvignon

Cousiño Macul followed the French tradition of Bordeaux making a Rosé wine from Cabernet Sauvignon. “Gris” is an ancient French word used to describe a light pink color on the skin of the grapes or in the final wine. Typically, “Gris” wines have less intense color than a classic Rosé.

Harmonies

This wine is great for summer time, ideal to serve cold. It is recommended as aperitif or to drink accompanied by soft cheese, fruit and preparations as sushi or salmon carpaccio.

Winemaker’s notes

The climate during season 2015-2016 was not usual comparing it with past years. The main effects were over the health of the grapes due to strong showers during April; a delay in the ripening period due to a cold spring; and lower general yield due to both conditions. All our wines are expected to develop very well ending up fresh and with good natural acidity. In the case of whites, they will show lower alcohol levels. In the case of reds, they will be elegant with flower notes and fruity. In general, we´ll get lower yields but high quality wines, representatives of the climate conditions, origin and variety.

Winemaking

For producing this wine, Cousiño Macul works with mature Cabernet Sauvignon grapes, but the winemaking method is similar to the one used for white wines. The juice is separated from the skins after a very short period of time, were it extracts its light and attractive color. Afterwards, the juice is kept at 10°C (50°F) for 36 hours to make the solid particles decant, leaving a clear juice for us to work with which we transfer to another tank to start the fermentation. This process takes about 35 days at an average temperature of 13-14°C (57-59°F) using Prise de Mousse yeasts. When finished, It is kept maturing in the tank for 2 months and bottled right away to preserve its charming personality.

Tasting notes

Our “Gris” has a light pink, clear and bright color. It has very fresh and fruity aromas of berries, mandarin and pink grapefruit, giving way after a while to jasmine and peach notes. In mouth, the fresh peach and citric notes are confirmed, keeping a very reach acidity and long mouthfeel.
