This Cabernet Sauvignon is faithful to it´s varietal character. The emphasis is placed in representing the variety and terroir, reason why it doesn´t have any process with wood involved. Fruity and balanced wine, well structured to accompany main dishes.

Due to its varietal characteristics, it is an ideal wine to go with all types of fatty or rather spicy meats such as beef or pork cutlets in simple preparations, as well as cold cuts and medium-high spiced dishes. Beef stew or Loin with a soft sauce and mashed sweet potatoes.
Season 2014-2015 had the highest temperatures and least amount of frosts in the last 3 years. It`s main characteristics was the absence of rainfalls during the flowering and harvest period, giving us very healthy grapes to work with.
High temperatures got our grapes faster to the optimal ripening, giving to our wines a discreet acidity, structured tannins and higher aromatic intensity.
The grapes were ground immediately after harvesting. They were then subjected to a cold maceration of 3 to 5 days before fermentation. Selected yeasts were used at a fermenting temperature between 26°C and 28°C, taking 8 to 10 days for finishing this process, and followed by a full malolactic fermentation during several months.
Cherry red and bright color. In the nose, medium aroma intensity and fruity. Notes of blackberry, raspberry, mint, toffe and tobacco leafs. In mouth, it´s a dry elegant and fuirty wine. Medium acidity and velvety tannins. Progressive entrance and a medium to long-lasting finish.
